Mexican Party Challenge
Over the summer, I was invited to my friends place for lunch. Traditionally, I will come bearing desserts. This time, I had a new challenge: multiple food allergies. My dear friend’s daughter, Sonora, has multiple food allergies; therefore, she is unable to eat many dishes and treats. As one of her "fake aunties” I wanted to ensure she was able to enjoy the cake as well. The challenge was to make a delicious dessert with no eggs or nuts.
This took me a few days to find the right creation, but I figured something delicious in the end. What I made was a "‘Tres Leche Eggless Cupcakes": fit for a Mexican themed BBQ luncheon. What I used was an eggless vanilla cake recipe, and then combined that with a Tres Leche syrup and topped with whipping cream.
I did not realize it before, but it turned out Tres Leche cake was a fan favourite for my friend’s husband. So when I presented the cake, I felt a tinge of added pressure for the cake to meet Mexican expectations. I am thrilled to say, it did! They LOVED IT! What a sigh of relief that was!
